Safe only if egg is well-cooked and guanciale is well-browned. 'Creamy' versions with undercooked yolk carry salmonella risk: better ask for well-cooked egg at restaurants.
You can eat this again while breastfeeding: the pregnancy-specific risks (listeria, toxoplasmosis, salmonella) no longer apply after birth. Keep normal food hygiene.
General information, not medical advice. It follows the public guidance for pregnancy and breastfeeding, and it cannot know your own history: for anything about your health or your baby's, the person to ask is your midwife or doctor.
