Cooking with alcohol (wine, liqueur-soaked desserts)

In pregnancy: Never While breastfeeding: Never

There is no safe amount

Why

No amount of alcohol is considered safe, not even in food, and cooking does not burn it all off: a stew cooked for 2 hours keeps about 10%, a flambé about 75%. Avoid risottos and meat deglazed with wine, desserts soaked in liqueur (babà, tiramisù with marsala) and alcohol-based vanilla extract.

Instead

  • Vegetable stock to deglaze
  • Grape or apple juice
  • Vanilla pod or vanillin
